Taco Potatoes

Ingredients
  

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 tablespoons water
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup shredded lettuce
  • 1 roma tomato diced
  • 2 green onions sliced
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil or parchment paper.
  • Scrub and dry the potatoes. Poke a few holes in each with a fork. Rub each potato with olive oil and sprinkle with salt.
  • Place the potatoes on the baking sheet and bake for 40 to 45 minutes or until fork-tender and crispy on the outside.
  • While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Drain any excess grease from the skillet. Add taco seasoning and 2 tablespoons water. Stir to combine and let simmer for 2 to 3 minutes until sauce thickens.
  • Once potatoes are done baking, let them cool slightly. Slice open the top of each potato and fluff the interior with a fork. Sprinkle with salt and pepper if desired.
  • Spoon the taco meat into each potato. Sprinkle with shredded cheddar cheese and let the heat melt the cheese slightly.
  • Add sour cream, salsa, shredded lettuce, diced tomato, and green onions on top of each potato. Customize with additional toppings like jalapeños or avocado if desired.
  • Serve warm with tortilla chips or a fresh side salad.
