- 40 club crackers
- 1 cup unsalted butter
- 1 cup brown sugar
- 1 cup creamy peanut butter
- 1 cup milk chocolate chips
- 1 cup butterscotch chips
- Coarse sea salt for topping
Line a 9 x 9 inch baking dish with parchment paper, leaving some overhang for easy removal.
Place a single layer of club crackers on the bottom of the dish. Break crackers as needed to fill the space.
In a saucepan over medium heat, melt the butter and brown sugar together. Bring to a boil and let it simmer for 5 minutes, stirring constantly, until thickened and golden.
Remove the saucepan from heat and immediately stir in the peanut butter until smooth and fully incorporated.
Pour half of the caramel peanut butter mixture over the first layer of crackers and smooth it evenly with a spatula.
Add a second layer of club crackers over the caramel layer.
Pour the remaining caramel peanut butter mixture over the second layer and smooth it out.
Top with a third and final layer of crackers.
In a microwave-safe bowl, melt the milk chocolate chips and butterscotch chips in 30-second intervals, stirring between each until smooth.
Pour the melted chocolate mixture over the top layer of crackers and smooth it with a spatula.
Sprinkle coarse sea salt evenly over the top for a sweet-salty finish.
Refrigerate for at least 2 hours or until fully set.
Once set, lift out the bars using parchment paper and cut into 16 squares with a sharp knife.
