Salt River Bars

Salt River Bars are a decadent, multi-layered treat combining the snap of buttery club crackers, velvety caramel, smooth peanut butter, and rich chocolate. Salty, sweet, and utterly addicting, they are the perfect no-bake dessert for any occasion.

Ingredients
  

  • 40 club crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup creamy peanut butter
  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips
  • Coarse sea salt for topping

Instructions
 

  • Line a 9 x 9 inch baking dish with parchment paper, leaving some overhang for easy removal.
  • Place a single layer of club crackers on the bottom of the dish. Break crackers as needed to fill the space.
  • In a saucepan over medium heat, melt the butter and brown sugar together. Bring to a boil and let it simmer for 5 minutes, stirring constantly, until thickened and golden.
  • Remove the saucepan from heat and immediately stir in the peanut butter until smooth and fully incorporated.
  • Pour half of the caramel peanut butter mixture over the first layer of crackers and smooth it evenly with a spatula.
  • Add a second layer of club crackers over the caramel layer.
  • Pour the remaining caramel peanut butter mixture over the second layer and smooth it out.
  • Top with a third and final layer of crackers.
  • In a microwave-safe bowl, melt the milk chocolate chips and butterscotch chips in 30-second intervals, stirring between each until smooth.
  • Pour the melted chocolate mixture over the top layer of crackers and smooth it with a spatula.
  • Sprinkle coarse sea salt evenly over the top for a sweet-salty finish.
  • Refrigerate for at least 2 hours or until fully set.
  • Once set, lift out the bars using parchment paper and cut into 16 squares with a sharp knife.
