- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter melted
- 8 ounces cream cheese softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 can 20 ounces crushed pineapple, drained
- 2 cups heavy whipping cream
- 2 tablespoons granulated sugar
In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the texture resembles wet sand.
Press the graham cracker mixture into the bottom of a 9x13 inch baking dish firmly and evenly. Place in the refrigerator while you prepare the filling.
In a large mixing bowl, beat the softened cream cheese until smooth using a hand or stand mixer.
Add the powdered sugar and vanilla extract to the cream cheese and beat until well combined and fluffy.
Gently fold in the drained crushed pineapple using a spatula until evenly incorporated.
In a separate bowl, whip the heavy cream with the granulated sugar until stiff peaks form.
Fold the whipped cream into the pineapple and cream cheese mixture in batches until the filling is fully blended and creamy.
Spread the pineapple cream mixture over the chilled graham cracker crust using a spatula to even out the top.
Cover the dessert and refrigerate for at least 4 hours or overnight to allow it to set fully.
Once set, slice into squares and serve chilled. Garnish with additional pineapple pieces or mint leaves if desired.
