No Bake Pineapple Cream Dessert

Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can 20 ounces crushed pineapple, drained
  • 2 cups heavy whipping cream
  • 2 tablespoons granulated sugar

Instructions
 

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the texture resembles wet sand.
  • Press the graham cracker mixture into the bottom of a 9x13 inch baking dish firmly and evenly. Place in the refrigerator while you prepare the filling.
  • In a large mixing bowl, beat the softened cream cheese until smooth using a hand or stand mixer.
  • Add the powdered sugar and vanilla extract to the cream cheese and beat until well combined and fluffy.
  • Gently fold in the drained crushed pineapple using a spatula until evenly incorporated.
  • In a separate bowl, whip the heavy cream with the granulated sugar until stiff peaks form.
  • Fold the whipped cream into the pineapple and cream cheese mixture in batches until the filling is fully blended and creamy.
  • Spread the pineapple cream mixture over the chilled graham cracker crust using a spatula to even out the top.
  • Cover the dessert and refrigerate for at least 4 hours or overnight to allow it to set fully.
  • Once set, slice into squares and serve chilled. Garnish with additional pineapple pieces or mint leaves if desired.
