- 6 cups peeled and diced russet potatoes
- 1 teaspoon salt
- 4 ounces cream cheese softened
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup cooked and crumbled bacon
- 2 tablespoons chopped fresh chives
- 1 sleeve Ritz crackers crushed
- 4 tablespoons unsalted butter melted
Preheat the oven to 350°F and grease a 9x13 inch baking dish.
Bring a large pot of salted water to a boil. Add diced potatoes and cook for 10 to 12 minutes or until tender. Drain and return to the pot.
Mash the potatoes until smooth, leaving a few chunks for texture if desired.
Stir in the cream cheese, sour cream, cheddar cheese, garlic powder, onion powder, and salt. Mix until well combined and creamy.
Fold in crumbled bacon and chopped chives, reserving a small amount of each for garnish.
Spread the potato mixture evenly into the prepared baking dish.
In a small bowl, combine crushed Ritz crackers with melted butter until well coated.
Sprinkle the cracker mixture evenly over the potatoes.
Cover baking dish with foil and bake for 30 minutes. Remove foil and bake an additional 10 to 15 minutes until topping is golden brown and crisp.
Let casserole cool slightly before serving. Garnish with extra bacon and chives, if desired.
