Million Dollar Potato Casserole

Ingredients
  

  • 6 cups peeled and diced russet potatoes
  • 1 teaspoon salt
  • 4 ounces cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup cooked and crumbled bacon
  • 2 tablespoons chopped fresh chives
  • 1 sleeve Ritz crackers crushed
  • 4 tablespoons unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13 inch baking dish.
  • Bring a large pot of salted water to a boil. Add diced potatoes and cook for 10 to 12 minutes or until tender. Drain and return to the pot.
  • Mash the potatoes until smooth, leaving a few chunks for texture if desired.
  • Stir in the cream cheese, sour cream, cheddar cheese, garlic powder, onion powder, and salt. Mix until well combined and creamy.
  • Fold in crumbled bacon and chopped chives, reserving a small amount of each for garnish.
  • Spread the potato mixture evenly into the prepared baking dish.
  • In a small bowl, combine crushed Ritz crackers with melted butter until well coated.
  • Sprinkle the cracker mixture evenly over the potatoes.
  • Cover baking dish with foil and bake for 30 minutes. Remove foil and bake an additional 10 to 15 minutes until topping is golden brown and crisp.
  • Let casserole cool slightly before serving. Garnish with extra bacon and chives, if desired.
