Ingredients
  

  • 2 large cucumbers sliced thin
  • 4 medium tomatoes cut into wedges
  • 1 medium red onion sliced thin
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Fresh parsley chopped, for garnish

Instructions
 

  • Wash and peel the cucumbers if desired, then slice them into thin rounds.
  • Rinse the tomatoes and cut them into even, bite-sized wedges.
  • Peel and thinly slice the red onion.
  • In a large bowl, combine the cucumbers, tomatoes, and onions.
  • In a separate bowl or large measuring cup, whisk together the white vinegar, water, sugar, salt, black pepper, garlic powder, oregano, and olive oil until sugar and salt are dissolved.
  • Pour the marinade over the vegetables in the bowl. Toss gently to combine and ensure everything is well coated.
  • Cover the bowl with plastic wrap or transfer the mixture to an airtight container.
  • Refrigerate for at least 2 hours before serving to allow flavors to develop.
  • Stir once more before serving and garnish with fresh chopped parsley. Enjoy chilled.
