- 2 large cucumbers sliced thin
- 4 medium tomatoes cut into wedges
- 1 medium red onion sliced thin
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- Fresh parsley chopped, for garnish
Wash and peel the cucumbers if desired, then slice them into thin rounds.
Rinse the tomatoes and cut them into even, bite-sized wedges.
Peel and thinly slice the red onion.
In a large bowl, combine the cucumbers, tomatoes, and onions.
In a separate bowl or large measuring cup, whisk together the white vinegar, water, sugar, salt, black pepper, garlic powder, oregano, and olive oil until sugar and salt are dissolved.
Pour the marinade over the vegetables in the bowl. Toss gently to combine and ensure everything is well coated.
Cover the bowl with plastic wrap or transfer the mixture to an airtight container.
Refrigerate for at least 2 hours before serving to allow flavors to develop.
Stir once more before serving and garnish with fresh chopped parsley. Enjoy chilled.
