Keto Philly Cheesesteak Casserole

Ingredients
  

  • 1 pound thinly sliced beef sirloin or shaved steak
  • 1 tablespoon olive oil
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 yellow onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 4 ounces cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 6 slices provolone cheese
  • 1 tablespoon butter

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch casserole dish with butter or cooking spray.
  • In a large skillet over medium heat, heat the olive oil. Add the sliced onions and bell peppers. Sauté for 6 to 8 minutes, or until softened and slightly caramelized. Remove from skillet and set aside.
  • In the same skillet, add the sliced beef. Season with salt, pepper, paprika, and add the minced garlic. Cook for 5 to 7 minutes until the beef is browned and cooked through.
  • Reduce heat to low and stir in the cream cheese until fully melted and combined with the beef.
  • Return the sautéed vegetables to the skillet and stir to combine everything evenly.
  • Spoon the entire mixture into the prepared casserole dish. Sprinkle the shredded mozzarella over the beef and veggie mixture.
  • Lay the provolone slices on top of the mozzarella to cover completely.
  • Bake uncovered for 15 to 20 minutes, or until the cheese is bubbly and golden brown on top.
  • Let cool for 5 minutes before serving. Garnish with chopped fresh parsley if desired.
