Cinnamon Swirl Muffins

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • For the cinnamon swirl:
  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground cinnamon

Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with muffin liners.
  • In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
  • In a separate bowl, whisk the milk, melted butter, eggs, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
  • In a small bowl, mix together the brown sugar and cinnamon for the swirl.
  • Add a spoonful of muffin batter to each muffin cup. Sprinkle a small amount of the cinnamon swirl mixture over the batter. Add another spoonful of muffin batter to fill each cup about three-quarters full. Top with remaining cinnamon swirl mixture.
  • Use a small knife or toothpick to gently swirl the cinnamon mixture into the muffin batter.
  • Bake for 16 to 18 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  • Serve warm or let cool and enjoy later. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
