- 4 slices thick-cut bacon
- 1 tablespoon unsalted butter
- 1 medium yellow onion diced
- 1 green bell pepper diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 tablespoon all-purpose flour
- 4 cups chicken broth
- 4 medium russet potatoes peeled and diced
- 1 cup frozen corn
- 1 cup heavy cream
- Salt to taste
- Black pepper to taste
- Chopped green onions for garnish
In a large Dutch oven over medium heat, cook the bacon slices until crisp. Remove bacon and place on a paper towel-lined plate. Chop once cooled. Reserve 1 tablespoon bacon fat in the pot.
Add butter to the pot with the reserved bacon fat and add diced onion, bell pepper, and celery. Sauté for 6 to 8 minutes until the vegetables are softened and aromatic.
Stir in the minced garlic, Cajun seasoning, and smoked paprika. Cook for 1 minute to bloom the spices.
Sprinkle the flour over the vegetables and stir constantly for 1 to 2 minutes to create a light roux.
Slowly pour in the chicken broth while stirring, making sure there are no lumps. Add diced potatoes and bring to a boil.
Reduce heat to a simmer and cook for 20 to 25 minutes or until the potatoes are fork-tender.
Stir in the corn and cook for another 5 minutes.
Add the heavy cream and chopped cooked bacon. Return to a gentle simmer and heat through, about 3 minutes. Taste and season with salt and black pepper as needed.
Serve hot, garnished with chopped green onions or your favorite toppings.
