Ingredients
  

  • 4 slices sourdough bread
  • 1 ripe avocado
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Slice the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add lemon juice, a pinch of salt, and black pepper. Mash until creamy with small chunks remaining.
  • Grate the cheddar and mozzarella cheeses and mix them together in a bowl.
  • Lay out the four slices of sourdough. Spread butter on one side of each slice.
  • On the unbuttered side of two slices, spread a generous layer of mashed avocado.
  • Top the avocado layer with the cheese mixture, dividing it evenly.
  • Close each sandwich with the remaining bread slices, buttered side facing out.
  • Heat a skillet over medium heat. When hot, place the sandwiches in the pan.
  • Cook for 3 to 4 minutes per side, pressing down slightly with a spatula, until the bread is golden and the cheese is fully melted.
  • Remove from the skillet, let rest for one minute, then slice in half and serve immediately.
